This rice casserole, or Reisauflauf, is a heavenly blend of creamy, sweetened rice and fluffy egg whites. It's a filling and comforting dish that can be enjoyed as a main meal or a rich dessert. The recipe serves four and requires a large casserole dish.
In a large pot, cook the rice with the milk, a pinch of salt, and butter on low heat until it becomes thick. Stir frequently to prevent it from burning.
Once the mixture is thick, remove the pot from the stove and stir in sugar and vanilla sugar. (Add these last to prevent the mixture from burning faster).
Separate the eggs. Whip the egg whites to form stiff peaks.
Grease a casserole dish with butter or oil and preheat the oven to 180°C.
Stir the egg yolks into the mixture and gently fold in the egg whites. (A very large pot is needed for this step).
Pour the mixture into the casserole dish and bake at 180°C until the rice casserole turns golden brown.
