Kässpätzle is a comforting and satisfying dish that hails from the Swabian region of Germany. Often described as Germany's answer to mac and cheese, Kässpätzle brings together homemade spätzle noodles, luscious mountain cheese, and caramelized onions in a perfect union of flavors. It's the ultimate comfort food, ideal for chilly days or whenever you need a hearty, stick-to-your-ribs meal. It also makes a wonderful side dish for family gatherings and special occasions.
This Kässpätzle recipe is based on the Fine Speatzle recipe. It's best to have some spätzle frozen for a quick meal. Otherwise, prepare fresh spätzle, but use twice the recommended amount.
Tip: Add a pinch of sugar to help them caramelize.
Briefly sauté the spätzle in the pan with the onions.
Grate the mountain cheese. Mix one-third of it into the spätzle and sprinkle the rest on top.
Bake the spätzle in a preheated oven at 200°C (392°F) for 10-12 minutes.
Slice another onion into rings and sauté in clarified butter until light brown.
Mix in 1 tablespoon each of chopped parsley and chives. Top the spätzle with the herbed onions.
