Grandma's Applesauce is more than just a side dish or a dessert; it's a jar full of memories and traditions. Made from fresh, handpicked apples, this applesauce captures the essence of homely comfort and simple goodness. It's an enduring family recipe, handed down through generations. Whether you enjoy it alongside a main course or as a stand-alone treat, its rich, flavorful texture and the perfect blend of sweetness and spice make it a timeless classic.
Peel the apples and cut them into wedges. Remove the core.
For a slightly coarser texture, you can also dice some of the apples.
For every kilogram of apples, melt one tablespoon of sugar until it caramelizes (approx. 2 mins).
Add apple wedges and stir vigorously on low heat until the caramelized sugar lifts off from the pot's bottom (approx. 1-2 mins).
Add 125 ml of apple juice per kilogram of apples. Cover and cook until the apples are soft.
Tip: You can repeat the same steps with apple dices. However, cook them until they are just al dente and then strain the apple juice.
Mash the soft-cooked apples using a potato masher, a food mill, or a food processor. Then add the dices.
Add apple juice until you achieve the desired consistency.
Add a bit of lemon juice to prevent the applesauce from browning (adjust to taste).
Flavor the applesauce as desired with sugar, cinnamon, and optionally, raisins.
The applesauce can be preserved well in jam jars:
